
The Dalmore Distillery is located in Alness, north of Inverness. It sits beside the sea loch Firth of Cromarty, with the snow-capped peaks of northern Scotland in the background, pure water from Loch More and barley grown on the Black Isle. The distillery was founded in 1839 by Alexander Matheson and remained family-owned until 1960, when it was acquired by White & Mackay. One of the most important aspects of the whisky aging process is the selection of the right cask. When Dalmore purchases casks that previously held aged Spanish sherry, each barrel contains about five liters of sherry wine. By the time the casks arrive in Scotland, half of the sherry has been absorbed into the wood, while the remainder is removed before filling the barrel with whisky. Over time, the whisky absorbs the unique aromas from the wood. The distillery is also known for bottling some of the most expensive Scotch whiskies ever sold.
